This weekend has felt so much like spring! Although there’s been a chill in the air, the sun has been out and it’s made such a nice change to the greyness. I’ve been out for more short walks to enjoy the fresh air…

I’ve been going out first thing (well after some blended coffee) and its been very beautiful. I decided to try out my new Vibrams!

I mentioned in my thoughts on paleo post that I was interested in trying these out as they enable you to walk or run ‘bare foot’ which is suppose to be better for your feet and legs. I love these, I really enjoy being bare foot whenever I can (I don’t often wear slippers or socks in he house unless its very cold) as it just feels very natural to me. I’ll be doing a full review of them after I’ve worn them more, but after two walks they have been very comfortable, although I have suffered from cold numb toes!

Other than those walks I’ve just been pottering about the flat enjoying my last couple of days off before getting back to work tomorrow. I’ve loved being on holiday but I felt a bit ‘off’ last week for some reason – perhaps not having so much of my usual routine? Since Friday I’ve felt miles better though, I’ve been feeling so bright in myself and I’ve been super productive and organised too.

Food has been so good this weekend, simple but tasty! When I returned from my walk yesterday I had a chopped organic apple with greek yoghurt and cashew butter:

The apples I get from the farm shop are incredible!

Lunch was some scrambled eggs with avocado and a sliced red pepper:

I had the other half of the avocado this morning with breakfast:

Oh this was good! Coconut flour pancakes with vanilla (finally sussed out a good recipe!) topped with a fried egg, avocado and a little sea salt. I could just eat this all over again, yum!

Dinner last night was a home made harissa spiced lamb burger with roast squash and coconut oil stir fried brussels:

I also had a mixed berry smoothie topped with a load of tahini and some bee pollen:

Then I really fancied some chocolate so made some 10 minute raw chocolate:

These were super easy to make, just melted coconut oil (1 tbsp) mixed with 1 1/2 tbsp of raw cacao powder, a tiny pinch of pink salt and 2 drops of plain stevia. Then I poured the mix into silicone cups and popped in the freezer for 5 minutes. Heaven!

Oh and talking of chocolate, I made a lovely creamy mocha to enjoy while I did some writing yesterday:

Hopefully it won’t be long and I’ll be able to drink this iced because the weather will be so warm! I am a hopeless optimist ;-)
