I am such a daft cow at times, you’ll never believe what I did yesterday. James and I headed over to Newcastle as we had pre booked tickets for Star Trek. Or so we thought…

…turns out the movie was actually next Saturday and I’d hadn’t checked the dates when I’d booked the tickets. It doesn’t even come out until next Thursday! What a total doh moment! Looking on the bright side we did actually have a good day, starting with some eggs for breakfast:
Two eggs fried in ghee with an orange on the side. Then we popped into Starbucks for coffee no 1:
A lovely vanilla latte! Followed by some budget shopping in H&M where I snapped a quick selfie:
I just picked up a couple of vest tops and exchanged a t-shirt dress. I also picked up a nice summer dress with a gift card from Dorothy Perkins, fingers crossed the weather will be nice enough to wear it in Brighton!
We grabbed a quick bite to eat from Boots before trying to get into the cinema:
This was a Moroccan style chicken and couscous salad. I didn’t realise it was under 200 calories when I bought it, but it was surprisingly filling and kept me going until I had a big green smoothie when we got home.
Like I said it wasn’t a totally wasted trip, and at least we will be back again next weekend!
Last night I made some beef and liver meat balls for dinner:
These are definitely the best way to get your liver in! I mixed them with tomato passata, peppers and harissa paste then served with cauliflower rice, steamed spring greens and some olives. Absolutely delicious!
As well as the usual Greek yoghurt and frozen berries I treated myself to an evening snack of fresh raspberries with some super simple healthy chocolate sauce:
Just mix 1 tbsp of plain cocoa powder with water and agave syrup until it turns into a sauce, it’s almost like melted chocolate!
The chocolate love continued this morning with some chocolate protein pancakes topped with fresh strawberries and peanut flour sauce:
Other than that I’ve been having some fun in the kitchen making rhubarb and orange compote, slow cooked black beans which are now simmering in a vegetable packed chilli as well as coming up with a new recipe. Here’s a preview:
