This week has been one of those crazy weeks. I feel like I’ve hardly stopped! That hasn’t been a particularly bad thing as it has all been due to launching the Super Conscious Living Programme (totally amazed at the response, thanks to everyone that has bought it!) seeing a lot of Uniquely Healthy clients and otherwise being very productive. However, late yesterday afternoon in my part time job working with a charity, we decided to put in for some funding for one of our projects and the deadline is today! There was also 10 forms to complete. I have never typed so fast in my life! As much as I was stressed, I think I am one of those people that thrives on a bit of pressure and I got the job done, but I am feeling rather wiped from the whole thing.

The busy week has left me with a feeling of being caught on the back foot! I have done pretty well with food choices though, and as I have been ‘dialling it up’ (all explained in my Manifesto!) after my holiday then I did try and make that a priority. The salad above was delicious with chicken and cranberries being a favourite combination of mine at the moment. I’ve also been having a few of these turkey, veggie, olive bowls:

I just slice up some free range turkey steaks and stir fry then add two sliced peppers and two courgettes made into ribbons with a veggie peeler. I add some Italian seasoning and balsamic vinegar at the end and then chuck on a load of olives. So tasty and quick!

On Monday I had a little time to make a large portion of organic beef mince and veggie sauce. I used it with courgette spaghetti and also as a base for some chilli for lunches now that the weather is getting cooler:

I was quite impressed that I managed to get 6 meals (2 for James and 4 for me) from one 500g pack of mince by the time I’d added veggies and then extra veggies and beans to make the chilli. For breakfasts I’ve been living on these peach and egg scrambles either with chopped pecans as below or a scoop of nut butter:

I know fruit and eggs is a weird combo but try it! It’s a great way to get some protein into your breakfast and is pretty quick and easy to make, although I could have really done with having some portions of my Berry Baked Oatmeal in the freezer for something even quicker. I’ve also managed to keep up very well with workouts thanks to switching it from the gym to home:

  • Weekend – nothing, barely moved, exhausted from Berlin!
  • Monday – Gym – 10 minutes on each – cross trainer, treadmill, step machine, bike followed by 10 minutes of strength training
  • Tuesday – 30 Day Shred DVD Level 2
  • Wednesday – Gym – 10 minutes on each – cross trainer, treadmill, step machine, bike (had no time for strength)
  • Thursday – 30 Day Shred DVD Level 1

Oh that workout completely kicked my arse! I’ll be blogging more about Freeletics soon, but this was a great workout. Oh, and before you go thinking I’m proper fit, I can’t do a burpee to save my life, I had to do a highly modified version a) so that I didn’t die and b) so that I didn’t sound like I was going to come through the ceiling into the downstairs flat!

I’ve been making my own chai spice blend! This is something I’ve wanted to try for ages so I bought a few extra spices and I’ve been experimenting with various ratios all week. The mix has been going in with coffee, pancakes this morning, different teas etc. Can’t wait to share the final formula, and a few seasonal recipe ideas with you soon! Also…
