Don’t they look delicious? I made these super food chocolate cups yesterday and there is only one left! If you’d like the recipe just make sure you are signed up for my newsletter. I’ve been feeling quite creative in the kitchen these last few days so should have a few nice recipes coming up over the couple of weeks. This week has been absolutely brilliant, I’m working on some super exciting new projects, more on them in coming weeks and months!

Eat

Another week of decent eats, everything has tasted good and been nice and easy to make…

IMG 8230Chinese 5 Spice Pork with stir fried spring greens and courgettes

IMG 8279Pork escalope with sweet potato, steamed spring greens and grass fed butter

IMG 8220Double peanut butter protein pancakes

IMG 8239Porridge with an egg cooked in topped with almond butter and dried cranberries

I’ve been continuing to love the juices and green smoothies this week too:

I really enjoyed a fresh beetroot, carrot and apple juice and my smoothies have been a lovely blend of green and purple kale, pears, plums and frozen pineapple and mango.

Move

Photo 01 02 2014 14 06 11Loving the Yoga Studio app!

Workouts this week:

  • Monday – Gym, 3,2,1 workout
  • Tuesday – 15 minutes yoga
  • Wednesday – Gym 3,2,1 workout
  • Thursday – 30 minute intermediate combination workout from Yoga Studio app
  • Friday – Gym 3,2,1 workout
  • Saturday – Rest
  • Sunday – Spin class

I haven’t ran or been to Metafit just because of the way the week has worked out with different commitments. I have to admit I much prefer getting my Friday workout in first thing rather than waiting for Metafit later after work and this routine with 3 gym workouts, a class and some yoga feels really good for me right now.

Wear

Is anyone else massively ready for new season fashion? I am so over the winter now, roll on spring weather and being able to leave the house without feeling like I’m going to get soaked, freezing or both. I desperately need to do a pile of laundry so outfits this week have been a bit meh. Instead I’ve been online window shopping:

I am really looking forward to lighter warmer days!

On Tuesday evening I did a meditation workshop with my friend, manager and business partner Gillian. As I’ve been blogging about recently, I’ve been making a real effort to work on my stress levels and I’ve found that meditation really helps. Gillian has been doing it for years, in a very down to earth and non ‘airy fairy’ way and the workshop was really practical. I’ve been trying to incorporate some meditation everyday, if only for 2 minutes while I make coffee! Also…

getting tickets for Maximo Park in March // my Mam, Dad, Sis and best friend just been fabulous this week // handling tricky work situations well // taking a nap // warm baths // James buying me Justin Timberlake 20/20 experience, a great album

Next week is going to be another intense one for me before I take some time off the following week, but it’s all good, I now find that as long as I keep myself well organised I can handle whatever is thrown at me! I am chuffed that we have seen January out and are now in February, bring it on! How has your week been? Are you ready for spring yet? Give me a eat, move, wear, love or link from your week!

I’m with you on the weather front. It seems as though it hasn’t stopped snowing here in ages, it’s the worst! I did get too take a long weekend and go up to Toronoto this weekend; I literally screamed when I found a Topshop concession in one of the department stores (they only have a handful in the states). It was magical but they still have a lot of their sale things and not much in the way of cute summer dresses yet! Thank goodness for online shopping! Have a lovely week xx

I can’t complain about the winter up to this point! Today was lovely despite the wind…then again, I have a much higher tolerance for the cold than most and my only yardstick is whether the pavements are frozen and I can run or not, so my perception of positives and negatives about any given winter are pretty narrow. I certainly won’t ever complain about the arrival of spring though!

Love the look of those superfood cups…and that floral dress as well – it’s really striking and unique.

I am so ready for Spring. It can’t come quick enough. Lighter evenings, lighter mornings…warmer weather? Hmm maybe! Though I have to say winter wasn’t too cold this year. Just very wet.

I think it’s the wetness that has me craving spring, plus the darkness I’m ready for those lighter mornings now!
