One of my favourite things to eat recently has been cauliflower mash – a lower calorie and carb version of mashed potatoes. I’ve seen various versions of this in the blog world but my simple version with just cauliflower and coconut beverage is what floats my boat. In my more unhealthy days I would sometimes just eat a bowl of mashed potatoes with mountains of butter, especially when I was feeling down as a way of cheering myself up. It was quite simply comfort in a bowl! Now I still get the urge for something comforting and creamy and cauliflower mash fits the bill – in fact I actually prefer it to mashed potatoes as it leaves me feeling much less ‘heavy’. I decided to try making it as a soup, and oh my goodness it is good and so so easy!
Simple Creamy Cauliflower Soup (makes 2 servings, vegan, paleo friendly, gluten free)
- 1 large head of cauliflower
- 2 cups of coconut beverage (I used Kara Coconut milk but you could use tinned full fat or light coconut milk too, or a combination)
- 1/2 – 1 cup of hot water or vegetable stock
- seasoning to taste
Break the cauliflower into pieces and either boil or steam it until it very soft. Transfer to a blender and add the two cups of coconut milk and 1/2 cup of the hot water / vegetable stock. Blend until creamy and smooth adding more liquid if required. Season with salt and blend again. If you have a high powdered blender just continue to blend until the soup warms up or pour into a pan and reheat on the hob. Serve with a drizzle of oil or even a little butter on top, plus salt and pepper.
This is just so tasty for something so simple! If using the coconut beverage this is very light, so great if you are trying to lose weight. If not I strongly encourage you to add a tasty drizzle of oil on top – I used some nutty hemp oil. You could even just add a little creamy butter. Heaven!
