In chase you are wondering what the hell Chia seeds are, please let me explain! Chia seeds are grown in areas of South America – they are tiny seeds that are particularly high in Omega 3 fats and are a good source of fibre. When mixed with liquid them absorb it and swell up becoming pudding like. This pudding is a delicious way to get chia into your diet, they are also raw so contain all of their natural enzymes to support digestion.

I hadn’t had a chia pudding in ages, but as these are cold, I decided to have it with some warmed fruit to combat the chilly morning!

Almond Chia Seed Pudding with Warm Cherries (serves 1, vegan)

  • 2 tbsp of chia seeds
  • 1/2 cup of Alpro Almond Milk
  • 10 almonds, roughly chopped
  • Half a bag of frozen cherries

The evening before you plan to eat this combine the chia seeds and almond milk in a little tub and store in the fridge. The next morning the chia seeds will have absorbed all the milk and turned into a thick pudding. Warm your cherries in the microwave, add the chia pudding and sprinkle with chopped almonds. Eat!
