Yes, you read that right…sweet potato, chocolate chips and almond butter…all in one perfectly cakey package!
That is three of my favourite things right there, I just had to bring them together!
Sweet Potato Chocolate Chip, Almond Butter Cake Bars (makes 9 square bars, grain free)
- 1 cup (100g) of ground almonds
- 1/4 tsp sea salt
- 1/2 tsp of baking powder
- 1/2 tsp of cinnamon
- 1 medium baked sweet potato
- 2 tbsp of honey
- 1/4 tsp of vanilla stevia (optional)
- 3 large eggs
- 25g of dark chocolate chips
- 2 tbsp of almond butter (or peanut butter)
Pre heat the oven to 180 / 350F. Peel the skin off the sweet potato and add all the ingredients except the chocolate chips and almond butter to a food processor or blender and process until smooth. Transfer to a bowl and stir in the chocolate chips. Grease an 8×8 pan and pour the batter into it evenly. If your almond butter is ‘drippable’ miss this step, however if it is not, mix it with a couple of tbsp of hot water until it becomes more like the consistency of single cream (I also added a pinch of salt at this stage as my almond butter is unsalted). Drop little blobs of almond butter on top of the batter and then take the tip of the spoon and swirl it around. Bake for 25 – 30 minutes until firm and lightly golden. Allow to cool before removing and slicing.
Oh my word, these are dangerously good….
Sweet cinnamon scented sponge dotted with intense chocolate chips and salty nutty almond butter…
And as they are pretty low on sugar they can be enjoyed guilt free too!

If you aren’t fussed on almond butter try using chunky peanut butter instead…
The sweet potato could also be swapped for 1/2 cup of mashed butternut squash, pumpkin or banana. I do really love simple recipes with good ingredients like this!
