Well it’s been another lovely weekend for me, especially now that I’ve done all the cleaning ;-) I’ve been chilling out with the coffee and papers again this morning. I bought some whole jersey milk yesterday for a recipe coming up for you next week (really looking forward to sharing that one!) so I enjoyed some in my coffee:
Usually I’m more than happy to drink coffee black but when I have some creamy milk open I’m definitely going to make use of it. I’m still drinking it unsweetened as well, my taste buds are so much better since I reduced artificial sweeteners in things!
I was happy to start the weekend on Friday night with a tasty dinner:
Farm shop pork sausages with cauliflower mash, spring greens and broccoli with butter. We love those sausages from the farm shop, so delicious!
We had a movie night with The Hobbit. I snacked on some Thai Popchips (don’t forget to enter the Popchips giveaway!) and apples:
I’ve been on another apple kick this weekend! I had them again with breakfast yesterday morning:
Apple coconut quinoa porridge – I just simmered some cooked quinoa with koco coconut milk and honey for a little sweetness. I added a chopped apple, cinnamon and some coconut flour to thicken it up then topped with flaked almonds. It was gorgeous and kept me full for about 7 hours!
I’ve been feeling in a fashion rut recently, but I did like this outfit! Hence, I went shopping for a few bits and pieces (more on that tomorrow) and met my Mam and Dad who had my nephews with them, for a coffee:
The sun being out is more than a good reason to have iced coffees! This was an iced caramel latte and just fabulous. It was so good to see my Mam and Dad and the boys too :-) Then I pottered around the shops and headed to see my best friend. We went for a long and lovely walk in the sun with her two little girls. We walked around my old school and where my grandma used to live, it was a trip down memory lane! I have to say it was so good to be able to talk a lot of things through with her, what would we do without friends eh!
While I had been at the shops I’d decided to buy an M&S lunch:
I added some beets that needed using up, this was chargrilled chicken and peppers with spelt. I love M&S food, such a treat!
For dinner I needed to use up a couple of sausages from the night before and I came up with this amazing meal:
Spicy Spanish Sausages and Peppers (serves 1-2)
- 1 onion, chopped
- 2 peppers, finely sliced (I used a green and yellow)
- about 1/3 cup of tomato passata
- 2 cooked sausages (veggie / vegan sausages would also work)
- 1-3 tsp of jalapenos from a jar, minced (depending on how hot you like it!)
- 1 clove of garlic, minced
- about 10 mixed pitted Spanish olives
This was the total bomb, just slowly cook the onions and peppers in some olive oil, add the chopped sausages, tomato passata, minced jalapeños, garlic and Spanish olives and simmer until thickened. Holy yum! I served it with cauli rice and steamed kale. This will be had again, I went back for seconds it was so good. This was inspired by a meal that one of my Uniquely Healthy clients told me about, so thank you to her! I love it when randomly made meals surprise you. I’m also loving the spicy food right now!
Today has been great so far, as I was saying I was up early to get the cleaning done and out of the way, then its been protein pancakes for breakfast:
I made my simple protein pancakes topped with banana, maple syrup and a little butter. Plus that milky coffee from the top of the post, perfect for after tacking the cleaning!
This afternoon I have a fun project to do while I watch The Hobbit again, well why not it is a Sunday after all! Then I’m making a slow cooked Thai red beef curry for dinner. Gotta love weekends!
