Happy Friday! I hope you have all had a great week. I took the above photograph when I popped out for a walk yesterday. I realised that I can pretty much stay sat at my desk from 6.30 – sometime in the evening when I work from home on a Thursday and I really need to be more active. It was a beautiful day so I really had no excuse! I thought that pathway looked quite beautiful. I also saw these berries:

Finally I found some blackberries! I only managed to grab a handful, but they tasted delicious. 

It was really nice to have some sunshine yesterday as the first half of the week just seemed to be constantly dark. Yesterday morning I gave myself a 20 minute lie in then had coffee, so by the time I ended up eating breakfast it was actually light!

I made some porridge with an egg whipped in, along with orange juice, dried cranberries, walnuts and full fat yoghurt. As the full fat is so rich, I tend to use it in smaller portions. It just goes so well with warm oats. 

It’s really been one of those ‘eats on repeat’ kind of weeks, I’ve had lots of turkey taco chilli and made a big pan of beef and veggie sauce for eating with courgette spaghetti:

I love adding a few olives on top! I was also glad of having a freezer full of bean burgers. These Italian chickpea burgers I made a couple of weekends ago have been delicious served in a lettuce wrap:

I fried some red onions with this and served with a spicy tomato chutney, it was gorgeous!

Another thing I’ve been having a lot of is quick home made mochas:

I just make up some black coffee, add a spoonful of cocoa and almond milk then whizz in the blender to make it foamy. 

Oh and I can’t forget about yoghurt bowls!

I’ve been all over these recently, this was nectarines, figs and peanut flour sauce with the yoghurt.

Exercise this week has been great! I feel like I’m finding myself a routine again:

  • Saturday: Rest
  • Sunday: Spin class
  • Monday: Gym – 30 minutes cardio (10 mins each on cross trainer, step machine, bike) strength: legs, chest, shoulders and a plank
  • Tuesday: 15 minute intermediate yoga flow from the Yoga Studio app
  • Wednesday: Gym – 30 minutes cardio (10 mins each on cross trainer, step machine, bike) strength: legs, back, triceps and a plank
  • Thursday: Rest / walk
  • Friday: Gym – 30 minutes cardio (10 mins each on cross trainer, step machine, bike) strength: random moves higher rep and lower weight than earlier in the week, and a plank

As much as I only managed 15 minutes of yoga on Tuesday, I felt great afterwards. I need to keep on reminding myself of how good I feel when I do it!

This week has been filled with making plans for the future as me and my colleagues at work have been getting our heads together and creating some magic! We have loads of great ideas for things we would like to do in the coming months, these things being the more community focused side of what I do. Thinking about the difference we want to make has been very motivating. Alongside that I took sometime to get my head around what I have coming up between now and January (which is a LOT!) and figure out a way of ensuring I get done what needs to be done while retaining my sanity. Part of this is linked to how I see certain things I have to do. I had been feeling like I had a load of boulders in front of me blocking my path. I realised that I need to change how I think about these things, and instead of seeing them as boulders in my way, I need to start seeing them as stepping stones for getting ahead. Also…

This weekend is going to be non stop. As I hinted at on Wednesday, today I am off to an event! I have a stand at the Sunderland University Health and Wellbeing event for staff and students. I’m going to be doing a couple of demonstrations as well, eeekkk! Then tonight we have a gig and then another on Saturday. Full steam ahead!

    Oh good luck with the event! Sounds exciting :)
    That photo of your walk looks lovely! How nice to have somewhere like that to walk around. We have Tesco near our work, woohoo ;-)
    Well I am currently testing out our slow cooker so all new meals are happening in our household! :D

    I can’t believe how summery things look over there! Half of our trees are already missing their leaves here! I love fall, but I’m most definitely not ready for winter :?

    And I loe the idea of seeing things as stepping stones instead of obstacles. There will always be challenges in life to overcome, but each one serves to make us stronger, so in the end… it’s a good thing :)

    great imagery! Eats on repeat? Well quite a few actually. I’m almost always starting my day with a green banana smoothie in a bowl and I’m almost always ending it with a bowl of cooked curry carrot soup paired with a raw cracker. But I’m out of crackers now :( I might have to switch to puffed rice cakes now. I’m actually enjoying eating more cooked foods. XXX

    There is nothing like a good walk in nature and eat healthy food. It is really important to have a healthy lifestyle. I love to eat healthy food and do lots of exercise and of course, I love nature.

    I know that path well – I’ve run down it a few times ;) Looks lovely though – I had to do a double-take because there isn’t any rain! At least we had one good day this week in terms of the weather.

    It certainly does sound as though there are a lot of exciting things coming up for you – I’m sure you’ll handle everything as brilliantly as you always do :)
