Don’t they look delicious? I made these super food chocolate cups yesterday and there is only one left! If you’d like the recipe just make sure you are signed up for my newsletter. I’ve been feeling quite creative in the kitchen these last few days so should have a few nice recipes coming up over the couple of weeks. This week has been absolutely brilliant, I’m working on some super exciting new projects, more on them in coming weeks and months!
Eat
Another week of decent eats, everything has tasted good and been nice and easy to make…
Super simple Thai Green Chicken Curry Soup with chicken, spinach and peppers
Chinese 5 Spice Pork with stir fried spring greens and courgettes
Pork escalope with sweet potato, steamed spring greens and grass fed butter
Double peanut butter protein pancakes
Porridge with an egg cooked in topped with almond butter and dried cranberries
two fried eggs with avocado and an orange on the side
I’ve been continuing to love the juices and green smoothies this week too:
I really enjoyed a fresh beetroot, carrot and apple juice and my smoothies have been a lovely blend of green and purple kale, pears, plums and frozen pineapple and mango.
Move
Loving the Yoga Studio app!
Workouts this week:
- Monday – Gym, 3,2,1 workout
- Tuesday – 15 minutes yoga
- Wednesday – Gym 3,2,1 workout
- Thursday – 30 minute intermediate combination workout from Yoga Studio app
- Friday – Gym 3,2,1 workout
- Saturday – Rest
- Sunday – Spin class
I haven’t ran or been to Metafit just because of the way the week has worked out with different commitments. I have to admit I much prefer getting my Friday workout in first thing rather than waiting for Metafit later after work and this routine with 3 gym workouts, a class and some yoga feels really good for me right now.
Wear
Is anyone else massively ready for new season fashion? I am so over the winter now, roll on spring weather and being able to leave the house without feeling like I’m going to get soaked, freezing or both. I desperately need to do a pile of laundry so outfits this week have been a bit meh. Instead I’ve been online window shopping:
Floral dress, Daisy sun top, floral beaded necklace, cherry brooch – All Topshop
I am really looking forward to lighter warmer days!
Love
On Tuesday evening I did a meditation workshop with my friend, manager and business partner Gillian. As I’ve been blogging about recently, I’ve been making a real effort to work on my stress levels and I’ve found that meditation really helps. Gillian has been doing it for years, in a very down to earth and non ‘airy fairy’ way and the workshop was really practical. I’ve been trying to incorporate some meditation everyday, if only for 2 minutes while I make coffee! Also…
getting tickets for Maximo Park in March // my Mam, Dad, Sis and best friend just been fabulous this week // handling tricky work situations well // taking a nap // warm baths // James buying me Justin Timberlake 20/20 experience, a great album

Next week is going to be another intense one for me before I take some time off the following week, but it’s all good, I now find that as long as I keep myself well organised I can handle whatever is thrown at me! I am chuffed that we have seen January out and are now in February, bring it on! How has your week been? Are you ready for spring yet? Give me a eat, move, wear, love or link from your week!

I’ve been internet window shopping too! I’m ready for the new season, and kind of want to change my usual summer look. I just made your anti-inflammatory lentil soup, so good!
Yey for the soup! Glad you liked it, I had some from the freezer yesterday it was delicious :-)
I wish we had more sunshine- I don’t mind the cold but we have had so much rain. Yesterday on my run the sun came out which was lovely- more of that please! Thoosa are having a flash sale so am going to order a few bits but that is workout stuff not real clothes!
There was some nice hints of sun over the weekend I hope it keeps up for the rest of the month. Enjoy your shopping!
Gorgeous clothes! I know what you mean about getting soaked, I’m looking forward to banishing my raincoat as I’m wearing it SO much at the moment! Those choc cups look so good!
I love this post! Such a great roundup of fun things. That Topshop dress is so beautiful!
I always love making your recipes (the chinese 5 spice pork in particular) and those peanut butter pancakes look incredible! I recently discovered just how delicious and versatile whey protein powder is and have been enjoying pancakes for breakfast every day since! This is a link to my new blog and post on whey protein, it would be great if you could follow :) http://wp.me/p4j8nD-2
Thanks Hannah, glad you like the recipes! Just off to your blog now x
those chocolates look divine! As do all those smoothies. Love the floral dress too, so very “Laura” :) xx
I’m with you on the weather front. It seems as though it hasn’t stopped snowing here in ages, it’s the worst! I did get too take a long weekend and go up to Toronoto this weekend; I literally screamed when I found a Topshop concession in one of the department stores (they only have a handful in the states). It was magical but they still have a lot of their sale things and not much in the way of cute summer dresses yet! Thank goodness for online shopping! Have a lovely week xx
Haha, where would we be without online shopping! x
Those superfood chocolate cups look amazing! I’ve been doing a bit of online window shopping too, can’t wait for the weather to get better as there are so many nice spring things coming in! x
Oh my gosh the chocolate cups look amazing!!! I LOVE that kind of thing, especially with dark chocolate. I think cranberries would be lovely included too!
Oh yes cranberries would be gorgeous in them!
I can’t complain about the winter up to this point! Today was lovely despite the wind…then again, I have a much higher tolerance for the cold than most and my only yardstick is whether the pavements are frozen and I can run or not, so my perception of positives and negatives about any given winter are pretty narrow. I certainly won’t ever complain about the arrival of spring though!
Love the look of those superfood cups…and that floral dress as well – it’s really striking and unique.
xxx
I know, I should just be pleased we haven’t had any snow! I think you’d like those chocolate cups!
Been loving your smoothie – inspiration! And a yoga/pilates combo video – which left me more achy than expected!!
I need to do more yoga and pilates! Glad you’ve been enjoying the smoothies!
The Thai coconut soup sounds and looks delicious. I need to get my coconut back on again!
I am so ready for Spring. It can’t come quick enough. Lighter evenings, lighter mornings…warmer weather? Hmm maybe! Though I have to say winter wasn’t too cold this year. Just very wet.
I think it’s the wetness that has me craving spring, plus the darkness I’m ready for those lighter mornings now!
I am so ready for Spring- you can definitely see the mornings and evenings getting lighter over the last week which is great. Those superfood cups look awesome!
