Mint choc chip green smoothie

I’ve spoken at length here on the blog for my utter adoration for green smoothies. They were a revelation for me when I was moving from processed crap to a whole foods diet. How could something so healthy be so delicious? Regularly drinking green smoothies has given me more energy, better skin and greater food satisfaction. I sometimes crave ice cream, and green smoothies can offer that cold creamy texture in a much healthier package.

Last weekend I visited the market and picked up a big bunch of mint that was on it’s last legs as well as fresh spinach and avocados. I had the idea for this smoothie, and I’m so glad that I did because it is delicious! It contains no fruit so is great if you are cutting down on sugar or dealing with candida. Creaminess comes from the avocado and sweetness from coconut water so no additional sweetener is needed.

Plenty of mint gives this a delicious cool minty flavour and enhances that beautiful green from the spinach. Add a handful of cacao nibs and you have a supremely tasty yet healthy treat!

Mint Choc Chip Green Smoothie
Serves 1
Cool, creamy and minty smoothie packed with healthy ingredients

Ingredients
  1. 2 handfuls of spinach
  2. 1/2 avocado
  3. 1 large bunch of fresh mint (about a fist full of mint leaves)
  4. 250ml coconut water
  5. 1 handful ice
  6. 1/4 cup of cacao nibs
Optional
  1. 1 tsp greens powder
Instructions
  1. Add all the ingredients, except for the cacao nibs, to a blender and blend until smooth and creamy. Add about 3/4 of the cacao nibs to the blender and pulse so they become broken up and distributed through the smoothie. Serve topped with the remaining cacao nibs.

You can make this to drink from a glass, or reduce the coconut water and add more ice to make it a thicker, spoonable treat to eat from a bowl. Either way, try this and you’ll be hooked!

    Up for the challenge, but I don’t think I really need it. I am on a green smoothie craze recently, had one for breakfast 5 out of 7 days recently and I usually get up craving the next :D Actually, there are pictures waiting to be turned into a recipe post as soon as I find the time for that.

    This sounds yummy, and I’m glad it doesn’t have any fruit in it. I’m sad to say I’m still a green smoothie virgin! Perhaps this is the one for me to try first! One question, would dark chocolate work just as well? Or, where can I get cacao nibs? Thanks :)

      Dark chocolate would be just as good, you can get cacao nibs from Holland and Barrett, but they are pretty bitter tasting! I love them, but some people aren’t so much of a fan x

    Ooh see I’m not a big smoothie fan. For me personally it’s a lot of faff, I’d rather just eat the food itself (ok not a bunch of mint leaves, but you know what I mean! ;) But your smoothies always look so pretty. Love those glasses you use.

    I am all for smoothies – great for taking to office and ensuring you get all the energising benefits of green veg in busy days, plus cheaper then making fresh juice everyday. Plus avocados are my obsession right now – eating them whole with a pinch of salt all in one go – so good! I need to get me some cacao nibs (ohh sounds naughty….!)

    I always think it would be nice to add mint to green smoothies and never get round to buying any, I do use parsley in them quite a lot though. I’m always up for a green smoothie challenge!
