I’ve spoken at length here on the blog for my utter adoration for green smoothies. They were a revelation for me when I was moving from processed crap to a whole foods diet. How could something so healthy be so delicious? Regularly drinking green smoothies has given me more energy, better skin and greater food satisfaction. I sometimes crave ice cream, and green smoothies can offer that cold creamy texture in a much healthier package.
Last weekend I visited the market and picked up a big bunch of mint that was on it’s last legs as well as fresh spinach and avocados. I had the idea for this smoothie, and I’m so glad that I did because it is delicious! It contains no fruit so is great if you are cutting down on sugar or dealing with candida. Creaminess comes from the avocado and sweetness from coconut water so no additional sweetener is needed.
Plenty of mint gives this a delicious cool minty flavour and enhances that beautiful green from the spinach. Add a handful of cacao nibs and you have a supremely tasty yet healthy treat!
- 2 handfuls of spinach
- 1/2 avocado
- 1 large bunch of fresh mint (about a fist full of mint leaves)
- 250ml coconut water
- 1 handful ice
- 1/4 cup of cacao nibs
- 1 tsp greens powder
- Add all the ingredients, except for the cacao nibs, to a blender and blend until smooth and creamy. Add about 3/4 of the cacao nibs to the blender and pulse so they become broken up and distributed through the smoothie. Serve topped with the remaining cacao nibs.
You can make this to drink from a glass, or reduce the coconut water and add more ice to make it a thicker, spoonable treat to eat from a bowl. Either way, try this and you’ll be hooked!
Have you tried a green smoothie yet? I’m thinking of setting myself a little green smoothie challenge starting in April, I thought it would be nice in the run up to Easter to ‘pretox’ as well as a it being a good time to introduce more smoothies into your diet. Leave a comment if you’d be up for it!
Yum! I’ll be making this one tomorrow! I love a green smoothie so I’d definitely be up for the challenge
Brilliant! Keep an eye out on the blog for more details of the challenge!
I am absolutely obsessed with Green smoothies at the moment too. Best way to start the day!
Yep, I’d love to get involved in that. Gone off green smoothies lately and need to get back on them!
Brilliant! Keep an eye on the blog for more details!
Up for the challenge, but I don’t think I really need it. I am on a green smoothie craze recently, had one for breakfast 5 out of 7 days recently and I usually get up craving the next :D Actually, there are pictures waiting to be turned into a recipe post as soon as I find the time for that.
Haha, will be lovely for you to join in the challenge anyway!
This sounds yummy, and I’m glad it doesn’t have any fruit in it. I’m sad to say I’m still a green smoothie virgin! Perhaps this is the one for me to try first! One question, would dark chocolate work just as well? Or, where can I get cacao nibs? Thanks :)
Dark chocolate would be just as good, you can get cacao nibs from Holland and Barrett, but they are pretty bitter tasting! I love them, but some people aren’t so much of a fan x
That looks amazing,I would be up for the challenge- I’ve still never had a green smoothie!
Yey! Keep an eye on the blog for more details of the challenge!
I make a green smoothie every morning, but I’ve never tried mint! MUST try!
Definitely try the mint, it’s delicious!
This looks great! I would definitely love a green smoothie challenge! I’m on the hunt for coconut water now!
Brilliant! Will keep you posted on the challenge :-)
Ooh see I’m not a big smoothie fan. For me personally it’s a lot of faff, I’d rather just eat the food itself (ok not a bunch of mint leaves, but you know what I mean! ;) But your smoothies always look so pretty. Love those glasses you use.
Thanks Anna, I always think pretty food tastes a little better!
Yum this sounds lovely! I haven’t had enough smoothies in my diet lately so I would definitely be up for a little challenge maybe not every day but definitely 5 out of 7! ha x
Yey! that would be awesome Tamzin, will keep you posted :-)
Not had a green smoothie in a while and I bought an avocado the other day so will maybe try this soon. Maybe when it warms up a bit – it’s too cold & damp at the moment!
Urgh I know, I’m hoping it becomes more spring like soon!
I am all for smoothies – great for taking to office and ensuring you get all the energising benefits of green veg in busy days, plus cheaper then making fresh juice everyday. Plus avocados are my obsession right now – eating them whole with a pinch of salt all in one go – so good! I need to get me some cacao nibs (ohh sounds naughty….!)
Completely agree on the juice front, I find it quicker and cheaper as well!
I’ve never tried a green smoothie before. This looks so lovely though I’m tempted to give it a try over Easter, when I’m off work and have a bit more time for preparation and washing up!
You’ll definitely have to have a try, they are a lot easier to make and clean up than you think ;-)
Sounds awesome. I asked for money from everyone for my birthday so going to be buying a new heavy duty blender soon – have missed green smoothies :)
Enjoy! I would be lost without my blender!
Just found your blog from the UK bloggers facebook, love it :) will defs be taking some recipes down! Xx

Thanks India! Hope you enjoy the blog :-)
I always think it would be nice to add mint to green smoothies and never get round to buying any, I do use parsley in them quite a lot though. I’m always up for a green smoothie challenge!
Brilliant Lauren, will keep you posted on the challenge :-) Mint is so gorgeous in the smoothies!
